Da Hong Pao

Wuyi rock tea · 武夷岩茶

Da Hong Pao is the famous name inside Wuyi rock tea. In this collection it is the darker, roast-led milk tea—the one that feels closest to coffee without becoming coffee. The tasting notes on our pouch (deep roast, cocoa, mineral) are from our cup, not a mill spec sheet.

In the cup

Deep roast, cocoa, and a mineral finish. This is the Founder’s Kit tea for people who usually reach for coffee. Treat those notes as our tasting, next to the catalog’s fruit-floral-and-rock-rhyme language.

Milk and ice push it toward a roasted milk tea. If you want more rock and less cocoa, pull a slightly shorter, denser shot.

Mother trees, then a category

The original Da Hong Pao bushes grow on a cliff at Jiulongke (九龍窠) in the Wuyi mountains of northern Fujian. They are treated as cultural relics; picking from those mother trees stopped in 2007, and a harvest was placed in the National Museum of China. Almost no one drinking “Da Hong Pao” today is drinking those bushes.

What you buy now is usually one of two things: a tea made from the registered Da Hong Pao cultivar, or a commercial blend of Wuyi oolongs (often including Shuixian and Rougui) that is allowed to carry the name. Wuyi rock tea itself is a geographic product: oolong from Wuyi, made with the local process, showing the quality people call 岩韻—rock rhyme, or 岩骨花香, “rock bone, flower fragrance.”

Inside the mountain, teas are still argued over by site: Zhengyan (inside the scenic rocky core, including the “three pits and two streams”), half-rock, and river-flat teas. Site changes how mineral and floral the cup is. Process—especially the charcoal roast Wuyi is famous for—changes it just as much.

Shake, then fire

Wuyi oolong is a strip tea: wither, repeated shaking to bruise the leaf, a moderate oxidation, kill-green, rolling into strips, and a long, skilled roast. Qing-dynasty writers already treated Wuyi’s roast as the point of the craft, not a drying step. Fire is used to settle green edges, thicken the body, and turn floral high notes into dried fruit, cocoa, and warm rock.

The closest catalog SKU is 特濃大紅袍 (Super Strong Da Hong Pao): Oolong — Minbei oolong, shrub medium leaf, origin Fujian. Aroma: fruit and floral. Taste: mellow and sweet with rock rhythm (岩韻). That is a milk-tea roast of the name, not a claim that the lot is Zhengyan mother-tree tea.

Also in Founder’s Kit.
